Homemade Mac and Cheese

This recipe was actually shared with me from Tiff at Wright Writes!


Cook dry pasta (Macaroni=2 cups dry; Egg Noodles=4-5 cups dry; etc) until al dente. Do not overcook pasta!

While pasta is cooking, make cheese sauce:

4 Tbs Margarine or butter
4 Tbs Flour
1/2 tsp Salt
1/4 tsp pepper
1/2 tsp Dry Mustard
2 cups milk
1-1 1/2 cups shredded cheddar cheese

In microwavable bowl, melt butter, about 15-30 seconds uncovered. Stir in flour, salt, pepper, mustard, and milk with a whisk. Microwave uncovered 2-3 minutes, stirring every minute with whisk or fork until thickened. You may need to cook it longer to get it to the right thickness you want. When it is thick enough, add 1 cup of cheese gradually and stir until all cheese is melted. I usually microwave it another 30-60 seconds just to make sure it's all melted well.

Drain pasta. Spray casserole dish with cooking spray and pour pasta into dish. Pour cheese sauce over top of pasta and just kinda mix it together a little to coat the pasta a little. (you don't have to stir it but I like to just make sure everything is nice and coated) then sprinkle remaining cheese on top and bake at 350-400 degrees until cheese is melted and kinda bubbly. Serve!

Funeral Potatoes

Funeral Potatoes

Ingredients:
1 pkg. frozen hash browns (country style - 30 oz.)
1 cup sour cream
1 stick margarine (4 oz)
1 can cream of chicken soup
1 T instant minced (or freshly chopped onion to taste)
2 cups shredded sharp cheddar or Colby cheese

Preparation:
Melt margarine. Place hash browns in 9 x 13 baking dish. Pour margarine
over and mix well. Mix sour cream, soup, onion, and cheese and add to
hash browns, and mix thoroughly. Bake uncovered at 350 degrees for one
hour. (Cover over with crushed cornflakes if desired before cooking).

Banana Nut Bread

Blend:

4 mashed ripe banana's
1/2 cup soft butter
1 cup sugar
2 eggs


Mix together then blend with above:

2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup chopped walnuts

Pour into greased pan and bake at 350 degrees for appx 1 hour.

Test for doneness by inserting clean, sharp knife into center of loaf.
Will slide out clean when done.

Carrot Cake

This recipe is compliments Good Golly Miss Blondie

Grease and flour 10" cake pan.

Mix: 2 cups of sugar
1 1/2 cups oil


add:
3 lg. eggs
16 0z crushed pineapple in own juice
2 cups of shredded carrots
2 teaspoons of baking soda
1/2 teaspoon of salt
2 teaspoons of vanilla
2 teaspoons of cinnamon
3 cups of flour
1 1/2 cups of chopped walnuts

Heat oven at 350 degrees.

Bake 60-75 minutes (sometimes it takes a little longer, depends on what pineapple you use, some have more juice, brand names better)


Cream Cheese frosting:
1 8oz cream cheese, softened
1 stick butter, softened
2 teaspoons of vanilla
1 1/2 lbs. of 10x sugar
Whip until smooth

Baked French Fries

1 large baking potato
1 tablespoon olive oil
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon onion powder

1.Preheat oven to 450 degrees F

2.Cut potato into wedges.

3.Mix olive oil, paprika, garlic powder, chili powder and onion powder together.

4.Coat potatoes with oil/spice mixture and place on a baking sheet.

5.Bake for 45 minutes in preheated oven.

Crixpix Bars

1 16oz Reg. Marshmallows
1 Stick (1/2) Cup Oleo
4 1/2 Snicker Bars, cut up
1- 12 oz Box Crispix


1.Grease 9x13 Pan.

2. Heat marshmallows, oleo, and 2 1/2 Snickers bars until melted.

3.Pour over Crispix and mix.

4.Press in pan.

5.Cut last two Snickers and Sprinkle on Top.
